Ingredients
  

  • 13 to a 16-ounce box of white or yellow cake mix
  • 3.9 ounce box instant vanilla pudding dry
  • 13 grams of ground cinnamon
  • 3 to 4 eggs
  • 150 grams of canola oil
  • 150 ml warm water
  • 6 to 7 ounces sour cream

Cinnamon Cream Cheese Frosting

  • 4 to 6 ounces cream cheese softened
  • 50 grams of salted butter softened
  • 400 grams of powdered sugar
  • 13 to 25 grams of vanilla extract more as needed
  • 14 grams of ground cinnamon

  • Heat the oven to 325F. Fill two muffin pans with cupcake liners.
  • Mix the cake mix, vanilla pudding, and cinnamon in a big bowl. Mix until well combined.
  • Add the water, canola oil, and eggs after that. Finally, mix in the sour cream. The batter should not be overmixed or they will sink.
  • Fill the liners with the batter. Before a toothpick comes out clean, bake for 20 to 25 minutes. Take care not to overcook.
  • Take out of the oven and place on a cooling rack to cool. Let it frost until it has cooled down entirely.
  • In a bowl, combine the butter and cream cheese and beat with an electric mixer until smooth. Next, incorporate the cinnamon, vanilla, and powdered sugar.
  • 15 to 20 ml of milk can be added if it’s too thick. To make it thicker, stir in extra powdered sugar.
  • Put in a bag with frosting and decorate cupcakes as desired. Keep refrigerated in a covered container for up to 3 days.

Notes

Variation. In a small bowl, melt fifty grams of butter. After cooling, coat the tops of the cupcakes with melted butter and then dust with cinnamon sugar. 
Churros. Although I prefer to get mine from the freezer section, you can certainly make your churros. Just chop them into bite-sized pieces for these cupcakes.
