Tips for Chinese pancakes Recipe

Use Hot Water Dough.

  1. The dough is easier to roll out and the pancakes have a chewier texture when the flour and hot water are mixed.
  2. To make the dough, start with boiling water and add cold water as needed to get the desired consistency.

Use Quality Ingredients.

  1. The flavor and texture of your pancakes can be significantly improved by using high-quality oil and fresh scallions.

Roll Out Thinly.

  1. The dough should be rolled as thinly as you can without ripping it. This guarantees multiple layers and crispy pancakes.
  2. To stop anything from sticking, dust your work surface with flour.

Rest the Dough.

  1. After kneading, let the dough rest for a minimum of half an hour. This helps the dough roll out more easily by relaxing the gluten.
  2. To keep the dough from drying out, cover it with plastic wrap or a damp cloth.

Cook Over Medium Heat.

  1. To guarantee that the pancakes are cooked through without becoming burnt on the outside, cook them over medium heat.
  2. To ensure that both sides have the same color and crispness, flip them often.

Use Oil Generously.

  1. When pan-frying, make sure there’s enough oil to ensure that the pancakes get crispy and golden brown.
  2. Put the pancakes in the pan and heat the oil until it’s hot but not smoking.

Storage instructions

  • Refrigerator. Any leftover pancakes can be kept in the refrigerator for up to a week in an airtight container.
  • Freezer. I suggest storing it in the freezer if you plan to keep it for more than a week! For up to three months, store in an airtight container or freezer bag.
  • To reheat. It’s crucial to reheat them, regardless of how you store them! I like to reheat them in my toaster oven, but if time is of the essence, you could also use a regular oven or a microwave. Preheat the oven or toaster oven to 300–350°F until the pancakes are heated through.
