I love oats so much that I’ll eat them in almost any form. Whatever form this oatmeal takes baked, stovetop, muffins, chilled, overnight oats or even Dutch pancakes I’m all for it! I enjoy creating new oatmeal recipes for you. 

I have a baking obsession with banana bread. It makes a great, easy breakfast, snack, or, let’s be honest, dessert. Thus, “banana bread” suddenly occurred to me while I was coming up with ideas for new oatmeal recipes, and I knew it would be a hit.

Banana Bread with oats Recipe

Vegan banana bread oats that are free of gluten, taste just like the real thing and are incredibly easy to prepare. For a gourmet breakfast, top with toasted walnuts and caramelized bananas!

Ingredients
  

  • 100 grams old fashioned rolled oats
  • 200 grams water
  • 7 grams cinnamon
  • 8 grams vanilla
  • Pinch of sea salt
  • 1 an half banana sliced (divided)
  • 15 grams chopped walnuts
  • 30 ml coconut oil
  • 25 grams maple syrup

Instructions
 

  • Combine the oats, cinnamon, vanilla, sea salt, and half of the banana slices in a medium pot. Mix in the water until well combined.
  • For eight to ten minutes, heat on medium-high heat. To ensure that the banana slices melt into the oats and that the oats don’t stick to the pot, stir the oats several times while they are cooking. When all of the liquid has been absorbed and the oats are thick and fluffy, the oatmeal is done.
  • As the oats are cooking, warm up some coconut oil and maple syrup in a skillet over medium heat. To the skillet, add the remaining banana slices and walnuts. Fry the banana slices for 2 minutes on each side, or until a golden crust forms. Toast the walnuts slightly. Take off the heat.
  • Transfer cooked oats to a bowl and sprinkle walnuts and caramelized bananas on top. Drizzle with extra maple syrup for sweeter oats.

  • Banana: Half of the banana should be cooked in the oats before the remaining half is caramelized and used as a topping.

  • coconut oil: to cook the banana slices for the garnish. very tasty!
  • maple syrup: I suggest serving the banana with an additional drizzle after you’ve sautéed it in a little maple syrup.

How to make this recipe

Prepare oats

This is a very easy recipe to make, just like most stovetop oatmeal recipes! In a medium-sized pot, combine the oats, cinnamon, vanilla, sea salt, and half of the banana slices. Stir in nondairy milk or water to mix well. For 8 to 10 minutes, cook over medium-high heat, stirring occasionally to ensure the banana slices melt into the oats and don’t burn. When the oatmeal is thick and fluffy and all of the liquid has been absorbed, you will know it’s finished.

Caramelize bananas and toast walnuts

As the oats are cooking, warm up some coconut oil and maple syrup in a skillet over medium heat. To the skillet, add the remaining banana slices and walnuts. Fry the banana slices for 2 minutes on each side, or until a golden crust forms. Toast the walnuts briefly before taking them off the stove.

Serve

Transfer cooked oats to a bowl and sprinkle walnuts and caramelized bananas on top. Drizzle with extra maple syrup for sweeter oats.

Store and Reheat Banana Bread with oats

To Store

After the bread cools completely, put it in a paper towel-lined, airtight storage container. Place an additional paper towel on top of the bread. Close and store at room temperature for a maximum of seven days.

To Freeze

The oats banana bread slices can be frozen for up to three months if they are stored in an airtight freezer-safe container. For a tasty treat, I like to freeze this bread in individual slices and thaw them as needed.

To Reheat from Frozen

Place the bread in the refrigerator to thaw overnight. Use a microwave to gently reheat until thoroughly heated.
