Ingredients
  

  • 400 g rolled oats
  • 25 g baking powder
  • 50 g cinnamon
  • 15 g nutmeg
  • 1/4 tsp salt
  • ~5 to 6 mashed banana
  • 2 eggs
  • 200 g cup unsweetened almond milk
  • 50 g cup maple syrup
  • 25 g vanilla
  • 100 g cup chopped walnuts chocolate chips, banana coins (optional)

Instructions
 

  • Set the oven to 375°F and use nonstick spray to grease a 7-by-7 pan. In addition, I like to cut a piece of parchment paper to use as a liner on the bottom.
  • Oats, baking powder, cinnamon, nutmeg, and salt should all be combined in a small bowl. Stir.
  • Mash the bananas in a big bowl until they are very soft.
  • Add the eggs, almond milk, vanilla, and maple syrup after whisking.
  • Stir the oat mixture into the wet ingredients until well combined.
  • You can now add walnuts, chocolate, and banana coins if you’d like.
  • Fill the dish with oil, then bake for 40–45 minutes, or until top is golden brown.
  • Allow to cool before slicing.

If baked oatmeal is unfamiliar to you, it’s a deliciously moist and rich breakfast dish. Essentially, it is a custard made of baked oats. Similar to bread pudding, but made with oats rather than bread. Try baked oatmeal if you dislike oats because you think they get too gummy when boiled in water. It’s rich, creamy, and soft without being gummy at all. Additionally, some people wrongly believe that baked oats are crunchy, but this is untrue. 

Here What you need

  • Old fashioned rolled oats: Bob’s Red Mill gluten-free old-fashioned rolled oats are my favorite brand.
  • Baking powder: aids in the rising of the baked oatmeal.
  • Ground cinnamon: ideal combination of spices for this baked oatmeal essential to making banana bread!
  • Sea salt: to combine the tastes altogether.
  • Almond milk: Although I used unsweetened vanilla almond milk, any dairy-free milk would work. You can prepare your own by using my recipe for homemade almond milk.
  • Maple syrup: I think that the best natural sweetener to use for baked oatmeal is pure maple syrup.
  • Eggs: In order for the batter to bake up like a cake, eggs help to bind it together. You can definitely use a flax egg in place of the egg for a vegan version.
  • Flaxseed: To help bind the dish together, we’re using ground flaxseed in place of an egg. You can easily grind up whole flax if that’s all you have. Put the whole seeds in a food processor and process for about 60 seconds, or until a gritty flour consistency is achieved. 
  • Coconut oil: ensure that the extra virgin coconut oil you use is used. Although I’ve bought coconut oil from a few different brands in the past, my favorite is Nutiva Organic Extra Virgin Coconut Oil.
  • Pure vanilla extract: an enhancer of flavor.
  • Ripe bananas: Without bananas, banana bread is not possible! Four bananas are needed, three of them mashed and one sliced. Verify that the bananas are ripe.
  • Walnuts: Walnuts are a great addition because they add flavor, texture, and healthy fats. If preferred, you can omit or substitute another nut of your choice.

How to make Banana Bread Baked Oatmeal?

To begin, lightly coat a square baking dish with coconut oil or cooking spray. Combine the oats, baking powder, cinnamon, and salt in a sizable bowl. Add the mashed bananas, walnuts, coconut oil, vanilla, ground flaxseed, milk, and maple syrup. Until all of the ingredients are combined, thoroughly stir. Pour the mixture into the baking dish that has been prepared carefully, then top with the sliced bananas. Bake for 40–45 minutes at 370ºF. When the top of the oatmeal turns golden brown, it’s done. Take it out of the oven and let it cool down a little before serving.

How to Store Leftover?

Since this recipe yields a sizable amount, you should store the leftovers to enjoy throughout the week. Once cooked, make sure to chill your baked oatmeal right away. After baking, I like to portion out my baked oatmeal into single servings and store them in the refrigerator in separate containers. After cooled, baked oatmeal can be frozen for up to three months or stored in the fridge for roughly a week. 

How to Serve Banana Bread Baked Oatmeal?

You can eat baked oatmeal either hot or cold. You can add some cold milk on top or just eat it plain. Additionally, you can add a little maple syrup on top if you’d like things to be a little sweeter.

FAQs

Do I need to use baking powder?

As a raising agent, baking powder contributes to the baked oatmeal’s lighter texture. It keeps it from getting overly heavy or dense. Nevertheless, you are free to omit it if you don’t have any baking powder or if you just prefer not to. 

What if I don’t have ground flaxseed?

You can replace the flaxseed with one regular egg if the vegan aspect of this recipe is not necessary. You could omit the binder entirely or use chia seeds instead. It turns out perfectly fine without the egg or flaxseed, in my experience.

What can I use instead of coconut oil?

Instead of using coconut oil, you can use another type of oil, melted butter (or ghee), applesauce, or even more mashed banana.

What can I swap the walnuts with?

You can leave out or substitute your preferred nut or seed.

Can I make baked oatmeal ahead of time?

It is indeed possible to prepare baked oatmeal in advance. Here are some tips I have for preparing this recipe ahead of time.

Can you swap rolled oats for steel cut oats or quick oats?

For baked oatmeal, you can use steel cut or quick/instant oats, but you must follow the recipe specifically designed for those oats due to the different liquid ratio. If you’re looking for a recipe that uses steel cut oats, I do have one that is baked with apples and cinnamon. 

Can I add protein powder to baked oatmeal?

Without adding extra liquid, I added a scoop of protein powder, and everything worked out perfectly! Add extra liquid if you plan to add more than one scoop of protein powder.

My baked oatmeal turned out soggy. What happened?

Though slightly soft, this recipe shouldn’t be overly moist. Verify if the mashed bananas aren’t too ripe as this may cause the mixture to become too liquidy. You may need to cook it for a longer period of time if it comes out gummy or soggy.

Can I use Steel cut oats?

Because steel cut oats require much more moisture and cooking time than rolled oats, you cannot substitute steel cut oats in this recipe without making additional adjustments. I have not tested this method, so I cannot offer suggestions for that specific substitution, but it might be possible to adjust it to work.
